Some days I’m just too tired to cook. This was the case last Thursday night. I came home from work with very low energy (what else is new) and I still had to make dinner, give my 11 month old a bath, clean up the dinner dishes and put my son to bed before even thinking of sitting down. UGH! These kind of days are typical for a working mama and even-though I have a hubby who is very good at splitting all of our chores, two working parents still does not equal any energy to spare.
Since it’s summer, I take a lot of help from our outdoor grill. Grilling is great because it minimizes clean-up and keeps the heat out of our house. I decided that I would throw some sausages on the grill but I wanted a light and refreshing salad to go with the meat. After a quick search in my fridge, I came up with this refreshing Watermelon, Lime and Feta Salad. Sounds like a strange mix, but the sweet/salty combo is a real winner!
This salad is perfect for a hot summer day. It takes only minutes to prepare which makes it a perfect dish to toss together right before your guests arrive at your next BBQ. Don’t have a grill, no problem serve this salad alongside some pan fried sausage.
Watermelon, Lime and Feta Salad
Serves 4-6 people
4 cups very cold watermelon, cut into 1-inch cubes
½ c cilantro, finely chopped
Juice of 2 limes
1 tsp sea salt (kosher salt will do as well)
½ c feta cheese
Toss watermelon, cilantro, lime-juice and salt in a large bowl. Gently stir in the feta and serve immediately.
